Tasty and Healthy Meal

Yesterday's lunch consisted of an open-faced sandwich consisting of:

slim 100% whole-wheat sandwich buns spread with a generous helping of homemade hummus
covered with Kale that had been sauteed quickly in Olive Oil and topped with fresh diced tomatoes.

Delicious!

  1. Thanks for sharing! I am looking for foods that are high in iron and are combined with foods that contain vitamin C. I am anemic and desire to build up my hemoglobin. This recipe sounds delicious and has exactly the ingredients I need. Peace!
